This all-raw salsa can be thrown together in just ten minutes. And because it’s made with tomatillos rather than tomatoes, it’s less sweet and more refreshing than the more familiar red salsa. (We also think it’s more interesting for topping Mexican dishes such as huevos rancheros or for eating with tortilla chips.)
- 1/2 pound small fresh tomatillos, husked and rinsed
- 1 large garlic clove
- 1 tablespoon chopped fresh serrano chile with seeds, or to taste
- 2 tablespoons chopped cilantro
- 2 tablespoons water

We made fresh organic tomatillo salsa today with our yummy tomatillos. Most of us thought it was delicious! Have you ever eaten a tomatillo before?
These are our campers for this week. Our Farm Manager Duncan planted these sunflowers. He says they make people happy. We would agree!
Yesterday we had two groups from the Kroehler Family YMCA out to the farm for a field trip. We took a tour of the farm, talked about organic gardening, and then practiced our weeding skills in the children’s farm.
We also learned that some weeds are edible. And they liked eating them. A LOT…
